Are Fires of War, Sands of Time 2D, Unspoken or Project V any good?
The other things you mentioned are either already on-line or don't really need to be, I think? Obtaining the LP in level 3 twice is killing yourself after the checkpoint, then opening the level door, then going to the LP again. Shutting the gate in level 5 doesn't prevent the shadow from stealing the LP. Butcher's tools might be interesting, although IIRC one or more of those unintentionally contained viruses?
If you believe any of the things you mentioned might be interesting to see/try and you don't mind sharing them, you could dump them in forum threads.

I think there's not a single English language video gaming-related website writing about Prince of Persia, which surprises me.
Maybe it would've been different if the PoP franchise would've had a more recent release. The last was mid 2010.
SimCity was released on the same day, apparently. I did learn that just now.

David's topic about his conversion says "pre-release" (latest version number is 1.07), maybe focus should be on his port?

I must be one of the few - if not the only - visitors here who first played the DOS game not that long after it had been released. I bought PoP at some local fair. Pretty sure it was a bootlegged copy, but the disk was blue and had a print similar to this. I remember having trouble reaching (passing) the gate in level 3. Then I read or heard about the cheat codes, and started investigating chasms by floating down. I also remember being impressed with the graphics. And I think, but I'm not sure, that, later (1995?), it was one of the games where music sounded differently after buying a Gravis Ultrasound Max.
